For the Beef:

  • 3 lbs beef braising steak (chuck roast), cut into 2–3 inch pieces
  • 2 tbsp kosher salt
  • 2 tbsp vegetable oil
  • 4 cups beef broth
  • 2 bay leaves
  • 1 cinnamon stick

For the Chilli Sauce:

  • 3 dried ancho chillies
  • 3 dried guajillo chillies
  • 2 dried árbol chillies (or 1 tbsp canned chipotle in adobo)
  • 1 small onion, chopped
  • 3 cloves garlic
  • 2 tbsp tomato paste
  • 1 tbsp lime juice
  • 1 tsp cumin
  • 1 tsp oregano
  • 1 tsp smoked paprika
  • 1 tsp black pepper

For Assembly:

  • Corn tortillas
  • Shredded cheese (Oaxaca or Monterey Jack)
  • Chopped coriander & diced onions, for garnish
