2 tbsp brown sugar

½ tsp cayenne pepper (optional, for extra heat)

Instructions

  1. Step 1: Mix the Marinade
  2. In a medium bowl, whisk together the ketchup, soy sauce, Worcestershire sauce, brown sugar, Dijon mustard, minced garlic, black pepper, paprika, chilli powder, and cayenne pepper until well combined.
  3. Step 2: Marinate the Meat
  4. Place your choice of chicken, beef, or pork in a resealable plastic bag or a shallow dish. Pour the marinade over the meat, ensuring it is fully coated. Seal the bag or cover the dish with cling film.
  5. Step 3: Refrigerate
  6. Let the meat marinate in the fridge for at least 2 hours, or for maximum flavour, overnight.
  7. Step 4: Prepare for Grilling
  8. When ready to cook, remove the meat from the marinade, allowing any excess to drip off. Discard any leftover marinade that has been in contact with raw meat.
  9. Step 5: Grill to Perfection
  10. Preheat your barbecue to medium-high heat. Place the marinated meat on the grill and cook until it reaches your preferred level of doneness, turning occasionally. For added flavour, baste with fresh marinade during the last few minutes of cooking.
